Easy Healthy Pancakes

It's Saturday, we have no schedule until later today, so as soon as I wake up I start thinking about pancakes!
I'm about to give you the EASIEST recipe ever. And it's one that will be nourishing for your body rather than making you feel vaguely uncomfortable & bloated!
Makes 5 large (but thin) pancakes
Ingredients
1 (tea) cup White Spelt Flour (substitute with gluten free white flour or ordinary plain flour)
1 egg
1 cup dairy free milk (sub with normal milk)
1 tsp baking powder
pinch of sea salt flakes
1 tbsp coconut oil (sub with butter)
Topping of your choice!
Method
• put all of the ingredients in a food processor/nutribullet/blender & blend until smooth!
•leave to stand for 15mins
•melt the oil in a large frying pan on a high heat
•turn pan down to medium heat & carefully pour in 1 ladle full of pancake mix, try to swish the mixture around so that it covers the entire base of the pan
•leave to cook until the top of the pancake is almost dry
•flip it over to cook the otherside. This only needs 1min!!
•add your choice of topping. For me it HAS to be Kirkland's Maple Syrup
