Banana Oat Muffins

My children LOVE eating cakes & why should I deny them that? I just don't love giving them shop bought cakes as you can never be sure what's in them. So as much as possible, I try to give them homemade goodies.
I developed this recipe myself, it's super easy to do & my kids really enjoyed making them with me (when I could stop them from licking the utensils!)
Ingredients (makes 16 muffins)
300g/2 cups gluten free oats
3 ripe bananas
450ml/4 fl oz/half cup plant based milk (oat, almond, soya, coconut)
125g/0.75 cup coconut sugar (can use same measurement of maple syrup or dates)
2 organic eggs
2 tsp gluten free baking powder
2 tsp cinnamon
Method
•pre heat the oven to 170C (340F) for a fan oven or 190C (375F)for an electric oven
•line the muffin tray with paper cases
•blitz the oats in a food processor until they turn into a fine powder
•add the bananas & blitz again
•simply add in the rest of ingredients, in no particular order & blitz until the mixture is lovely & runny
•pour into your pre-prepared muffin cases
•put them in the oven & bake for 20-25mins
•allow them to cool & then EAT!
These can be kept in the freezer, simply bag them up & seal the bag. Perfect for back to school lunches!
